As colleges across the country start up again, so does trying new things. At the University of Georgia, this includes entomophagy, the practice of eating insects. This month, the UGA hosted the Eating Insects national conference, in Athens, Ga. It is an annual gathering by the North American Coalition for Insect Agriculture (NACIA).
More than 100 people attended the three-day meeting, the second since NACIA was formed in 2016, to talk about insect agriculture. The meeting brought entomophagy researchers, commercial producers and vendors to UGA.
According to the Athens-Banner Herald, chef Joseph Yoon of Brooklyn Bugs, one of the conference speakers, showed how he incorporates ants, wasps and other insects into gourmet dishes.
